BLACK SUMMER TRUFFLE Flan SPRINGTIME Molise

250 gr of grated parmesan cheese
(Or other similar cheese, as long as not too mature)
Gr.250 whipping cream
6 eggs
Gr.25 cream / truffle paste
Nutmeg, salt, black pepper q.b.
Poppy
Whisk together all ingredients (except the truffle paste and poppy seeds) and check salt. Grease a baking dish, get the mixture to bake in water bath for 10 minutes at 150 degrees.
Add truffle paste and mix well, continuing to cook for about 20 minutes.
Remove from oven and let cool: put the SPRINGTIME on a plate, with poppy seeds, decorate the surface.
Served with a side of salad, beet and spinach raw florets: Accompany, if you like, with a white or a rosé wine.
